Why this is perfect

Champagne is great. It looks expensive, it feels expensive, and it is expensive. But it's not quite "fun". You have Prosecco for that, but Prosecco... feels cheap, looks cheap and can also taste cheap.

We took the best of both worlds here: a dry, complex wine with a burst of apples and a zing to it that brings the raciness of Prosecco to the quality you'd expect from Champagne. It basically says: I can be serious, but without taking myself too seriously. The kind of vibe we like to bring.

This wine was made by LJ Brimfield, who worked at amazing places like Kosta Browne & Evening Land

French technique. Italian zest. American greatness. I spent 40 hours hand-labeling each and every one of these bottles just so you could say the bottle is pretty.

This wine was made by our partner/mentor/wine consultant/winemaker in Portland (called LJ).LJ basically invented a new way to make amazing sparkling wine in a way that joins together the best of both sparkling winemaking techniques - Prosecco & Champagne. This wine was basically aged for a period of time in contact with the dead yeast cells that give Champagne it’s creaminess, and then carbonated in the same way that Proseccos are in order to give it freshness.

His recommendations to consume:
- Drink ice cold with aperitivo/by itself
- Drink with orange juice as a mimosa
- Make a killer French 75

Tasting notes: extremely bright, refreshing, and very apple-y.

The bottle is very dark green in order to protect the wine against light damage (a very real thing) and is properly corked and caged like champagne.
